Need some color inspiration for your wedding?

If you're in need of some big color inspiration and you're totally in love with the spring and summer fashion lines coming out in 2012, you're in luck!  I've been tirelessly searching and putting together a fun, cheerful and funky inspiration board for you.  It's for a carnival inspired wedding, but the bright colors are great for any exotic color themed wedding or tropical destination wedding you might be planning.

The food and decor should be just as fun as the colors.  Instead of a big towering wedding cake, instead try a dessert bar with fun foods (carnival finds like fried dough/funnel cakes) or bright pink whoopie pies with rainbow sprinkles.

1. Smaller guest lists for a more lavish wedding. When you have a smaller group, you can spend more money per person (aka you're wedding looks extravagant and you can spoil your guests!)
2. Making your wedding a weekend event with a post-wedding brunch and scheduling fun local activities
3. Different Centerpieces. Rather than doing a tall epic centerpiece of flowers,think out-of-the-box like hanging centerpieces.

Peppermint patty whoopie pies


If you asked me what my favorite thing in the world to eat was, I'd tell you chocolate. It's so delicious and so versatile. How so,you ask? Well I've had steaks at restaurants before where they've made a savory cocoa sauce to accompany the steak....pure genius.

I've never been a candy girl, someone into sugary sweets. I usually wipe all the frosting off cakes and could care less about 100% sugar treats.

Chocolate is so wonderful and I'm always trying to do different desserts with it. For my Christmas party, I decided to do whoopie pies. Never had one? It's a classic New England treat; chocolate cakes turned sandwich with a frosting center.

I have made these before, the classic version; which involves fluff (another New England thing). "Fluff" or Fluffinutter is a super-sweet marshmallow "soup" in a plastic tub that's traditionally used as the frosting in the sandwich. I however dislike it's super-sweet taste by itself. It's just too much for my taste.

Looking to elevate my frosting to that of my "whoopie pie chocolate dreams", I decided to experiment with something a little more upscale.

Sweet Inspiration: Deliciously Different Wedding Menus


Searching for the perfect Menu for my upcoming wedding, I looked for some menus that were different, fun and had a unique flavor all their own. From personalized to pretty, this group of unique menus has it all!

    Post-Wedding Brunch

    While we would have loved to have a post-wedding brunch at the same place we're having the Reception, unfortunately his brunch prices were crazy. He wanted $30 per person for eggs, pancakes and bagels. Pahh-leeze. What do you think this is? The The Bristol Lounge in Boston? At least they'll serve you a more upscale meal with things like crab cake benedict for the same price.

    Since we had to rule out our reception location, I considered the elks club down the road. I'll have to price out rental for the morning. If it's all included with food, it might be worth it. If not, I might have to DIY breakfast which means a very limited menu to things that can be pre-prepared.

    A lovely Bridal Shower for a lovely Bride-to-Be





     The perfect Bridal Shower starts with the loving care and planning from a wonderful Family and a great set of Bridesmaids!

    The Ultimate Bridal Shower Idea Book: How to Have a Fun, Fabulous, and Memorable PartyThis pretty little blue and gold themed shower couldn't have gone any better.  We had a happy and surprised guest of honor and a great group of guests that really got into the games.

    With fun games and lots of little treats and details, it made for a fabulous day with a lovely Bride-to-Be.






    All In the Details...

    Our Decorations were minimal. From tissue paper flowers, to the "Best Wishes" sign, the details were ruffled fun and girly.  For food we had brunch options like quiches, tomato mozzarella basil bites, turnovers, Caesar salad, fruit salad and mimosas.



























    The cake...

    To keep with the ruffle theme the cake was decorated with a pretty ruffle frosting and topped with ranuculas that I had picked from my garden and placed in blue water two days before the shower.  They picked up the blue color nicely.

    It was a two tiered chocolate cake with raspberry white chocolate cream cheese frosting. Yum!

    The Favors...

    Pretty little Clear and Gold Swans were filled with chocolate and candy and placed on a little table in the entryway with some flowers.

    A lovely little setup to greet you as you came in and left the party.













    The Games...
    We had a game where the bride had to guess answers correctly about the groom as well as a toilet paper dress game, which was by far the most fun.

    The ladies at the party got really into dressing up the bridesmaids and the bride-to-be got to pick the winning dress.










    The Prizes...
    Every game had a prize, lovely little labeled bottles of wine. The labels had the name of the Bride-to-be as well as the date of the Bridal Shower. A wonderful way to remember the day!

    Cotton Candy Cocktail Signature Drink

    If you read my recent post on how-to make your own Signature Drink Bar Menu's for your next event or wedding, you would have noticed a certain special ingredient on the list...cotton candy.

    We decided on a very limited bar selection.  This included Beer (probably 3 kinds: 1 light, and two regular options), Wine (2 reds, 1 white option) , extremely limited liquour (maybe 2-3 kinks) and two signature drinks (both incorporating the same main component, vodka).  The reason for this was simple, to save money and waste.  If we offered everything under the sun for drinks, we'd have a lot of opened-for-one-drink leftovers.  This way we minimize waste.

    My idea came from an episode of David Tutera's My Fair Wedding.  In it he served a simple drink with cotton candy as the "sugar rim". When the drink was poured over it, it melted into the glass.  It was a really cool show-stopping drink.  I have to have it.  Isn't it the most fabulous thing you've ever seen?

    The perfect nautical cake?

    So there doesn't seem to be much out there for classic looking nautical cakes. I've been on the hunt for something nice that I love and I just keep finding beach themed cakes with seashells and graham cracker "sand" dumped all over them. Hardly the look I'd imagine on a classy wedding cake. Plus my theme is more nautical, not beachy.

    Dark cakes with light designs are striking, but don't look much like wedding cakes to me as chic as they are. I knew I'd need something white or ivory with elements of my pink or blue in them.

    I've seen cakes with giant compass designs on the top, blue ribbons and pink flowers on them, pretty, but a bit much for what I want.

    I was flipping through a bridal magazine today and saw this cake.  It's fantastic!  It's delicately nautical.  What do you think?

    Cookies and Milk

    What food does everyone love and remember from their childhood as a delicious treat?  That would be cookies & milk. Nothing quite beats a cold glass of milk paired with some warm yummy chocolate chip cookies straight from the oven.  If for nothing else, your house smells delicious after.

    Your guest will appreciate it too if you give them a little treat. Whether it's your favor to your guests, or boxed up as a midnight snack for out-of-town guests to take away with them, everyone loves cookies and milk.

    Some brides might even forgo the cake and go straight for a dessert buffet/bar, of course, including the classic cookies.

    Cookie Buffet DIY how to:
    Make your batches of cookie dough 1 week in advance and freeze.  The day before, place in the fridge to thaw, then proceed to bake.  Get lots of pretty dishes to serve your cookies in.  Make sure to mix up heights by placing some cookies on pedestals. Use doilies and other pretty papers to place cookies on. 

    Grab some glass milk bottles filled with 1%, whole, chocolate and even strawberry if you're feeling wild. Place them in a tub filled with ice and you have a perfect treat for your guests!

    Signature Cocktails

    Want your next event to be swanky and stylish? Then bring on the signature drinks! Before your event you'll need to do some due diligence in selecting your perfect signature drink(s). We've got some great tips on how to select the perfect signature cocktails for your next big event.

    Ask yourself the following questions:
    1. What type of event am I throwing? (business, wedding, shower, birthday,etc.)
    2. Level of formality? (casual, formal, etc.)
    3. What type of vibe do you want? (I want it to feel like a: swanky bar, wild club, spa setting,etc.)
    4. What is your color theme?
    5. What are your favorite flavors?
    6. What types of food will you be serving?
    7. Where's your venue?
     Once you have some of the answers to your questions, continue on by finding drinks that you love.  There are many websites online where you can look up drinks by liquors, flavors and even colors.

    Find some recipes that you think you might like and experiment.  Grab the ingredients and play with them in your kitchen.  You might find that you prefer something fruity vs. something with milk in it, or something dry and classic vs. something hip and modern.

    Build your list of favorites and go over them with your venue.  Typically it costs less to have a signature cocktail vs. a fully stocked bar.  If you are having the event yourself, you could always hire a bartender.  Make sure he's certified and licensed to bartend and see if he can provide all the glasses and garnishes.  If not, it could get expensive.

    If you are hosting it yourself and either don't want a bartender or can't afford one, don't discount the idea of punch.  You can still have your signature drinks, just setup as self-serve and place in pretty containers with labels defining what they are.  Have fun finding names online or create a new and fun cocktail name to fit your party.  Please remember that some venues require a liquor license and/or insurance if your guests are going to be drinking.

    Remember it's all about fun and all about the experience of trying new things.  You might be surprised with what you come up with!

    Fall Wedding Gingerbread Cookies

    Christmas has come and gone, but during the fall and winter months all you want is some good, homemade comfort foods.  I'd call gingerbread cookies the perfect comfort cookie when it's chilly out.  Grab a warm cup of tea and it's heaven.

    What makes the perfect Gingerbread cookie?  A beautiful balance of sweet and spice.  This cookie has that.  Don't be scared if this dough is very sticky out of the mixer, you'll be refrigerating it and thoroughly dusting your work surface.

    If you're having a winter or fall wedding, these cookies would be perfect to serve your guests if you are having a dessert table, a great idea for a midnight snack, great tucked inside an out-of-town bag or perfect as your favors.

    Afraid you won't have enough time to make the dough and bake the cookies right before your  wedding?  Make the dough and cut your shapes out a 2 weeks to a month before the big day.  Freeze the dough, placing plastic wrap layers between cookie shapes.  When your ready, just pull them out of the freezer to defrost, and pop them in your pre-heated oven.  Then just spend the day with your bridesmaids making up little gifts for your guests.

    Ingredients

    * 3 cups all-purpose flour plus more for dusting
    * 1 tablespoon ground cinnamon
    * 1 tablespoon ground ginger
    * 1 teaspoon ground black pepper
    * 1 teaspoon dry mustard powder
    * 3/4 teaspoon baking soda
    * 1/2 teaspoon ground cloves
    * 1/2 teaspoon salt
    * 12 tablespoons unsalted butter, softened slightly
    * 3/4 cup dark brown sugar
    * 2 tablespoons milk
    * 1 egg
    * 1/4 cup molassas

    Directions

    Whisk the dry ingredients except the sugar. In the bowl of an electric mixer fitted with a paddle, cream the butter with the sugar until slightly fluffy. Slowly beat in the milk, molasses & egg.

    On low speed, beat in the dry mixture until combined; dough will be sticky. Divide the dough into 4 equal portions, roll each to 1/4 to 1/8-inch thick between sheets of parchment paper, and freeze until firm, about 20 minutes.

    Preheat the oven to 325 degrees F. Line sheet pans with parchment paper.

    Put the cookie dough on a floured work surface; cut and transfer cookies to the prepared sheets. Reroll and cut the scraps into cookies.

    Bake the thinner cookies for about 11 minutes, until crisp, and the thicker about 20 minutes. Cool for about 2 minutes, then transfer to a rack to finish cooling.

    Tips on serving Brunch to guests

    Want to show your guests how much you appreciate them for attending to your Wedding? Consider a high-end post-wedding brunch just for them. Most hotels or Inns will serve your guests in a separate room or section off an area specifically for your guests.

    Are you on a budget?  You can keep costs down by limiting the menu or having your guests serve themselves buffet style.

    Want your brunch to reflect your upscale venu or discerning tastes? Choose luxury ingredients and a create a customized menu. Serve with mimosa's or bellini's for an even higher-end brunch.

    If you have a venue that can't or won't serve brunch, consider hiring your food vendor you used for your Wedding.  You may even be able to negotiate a lower price for both meals by doing the combination of Wedding meals and the next day brunch.

    Having an at-home wedding?  You can still do an at home brunch.  Keeping the menu small is key if you are doing it all yourself.  Above, I've created a bagel open-faced sandwich, which is relatively quick and easy to create.

    Ingredients:
    - Your favorite bagels
    - organic / natural bacon
    - eggs
    - scallions/green onions
    - salt and pepper
    - goat cheese or your favorite cheese

    Directions
     Chop scallions into small rounds.

    Get a non-stick pan and turn the heat up in the pan to medium-high.  Place the bacon in the pan when it is heated up and begins to sizzle.  Cook until crispy and drain the bacon on a paper towel.

    Take half of a bagel and put in in the toaster and toast until desired.

    In the meantime drain 95% of the fat in the non-stick pan and crack your egg into the pan.  Try to crack it into a smaller shape and immediately break the yolk and spread around.  sprinkle a small amount of scallions onto the egg.  Flip the egg over and take off of the heat.  Sprinkle with your cheese.

    Put your Bagel on a small plate, cut side up and put your cheesy egg on top. (the cheese should be melted by now).  Top with bacon and put some salt and pepper to taste.  Sprinkle the top with the rest of your scallions.

    This above recipe serves 1, however to make this for many people I recommend an assembly line of cooking.  Rather than 1 or 2 pieces of bacon cooking, grab a bigger pan and cook all your bacon and drain.  Rather than 1 half of a bagel, place 4 bagel halves in a toaster.  I still recommend cooking 1 egg at a time since they may run into each other.  To simplify this you may want to do almost 1 big "scrambled" egg in a pan and "slice" them up into 4 separate servings.

    Need some inspiration to make your Holiday Party filled with Christmas Spirits?  Look no further than the classic cocktail. 

    Food and Wine Magazine has a great guide to classic and not-so-classic cocktails.  Use it as inspiration for your next Holiday party or your Wedding.  A fun way to add pizazz to your Wedding or event is to supply a signature cocktail.

    This can be based on the colors of your Event or Wedding or your Theme.  You can even take a classic drink and re-name it based on your theme.

    The Flavors of Fall

    The fall brings us some fantastic flavors and ingredients.  Some of your favorite childhood flavors are what make up the best drinks for the holidays.

    Experiment with all the colors, textures and scents the fall and winter months bring to create a cocktail that is uniquely your own.

    Play with ingredients like Eggnog, Apple Cider and Pomegranate Juice. Experiment with familiar cozy scents like Cinnamon and Nutmeg.

    Remember balance is key when making your perfect concoction.  Balance flavors like tart and sweet.  Get the Tart from things like cranberries and sweet from things like cider or pomegranate.

    Garnish can be just as fun to add and give guests an idea of what's in the drink.  Tossing some Cranberries, pomegranate seeds, cinnamon sticks or even a wedge of lemon can make your drink look professional and festive.

    If your traditional iced drink is not what you're in the mood for, heat it up with some spices and your stovetop or crockpot.  Spiced (and spiked) Apple Cider is always a big hit and tastes like  fall in a cup.  Don't forget your mulling spices for the full effect.

    For extra fun, name your drink a festive or cute name for your theme.

    Turn Everyday Comfort foods Gourmet for a unique and Fun Event

    What's your secret guilty pleasure?

    Is it Mac & Cheese?  Tomato soup with grilled cheese?   Or maybe even milk and cookies?

    While these may seem like everyday comfort foods to most, they can be the most memorable at a party.  It's what everyone knows and loves and they'll appreciate that you're sharing something so unique and fun.

    Here's a little secret.  At your wedding reception nobody really cares about the fork tender tenderloin.  They want fun comfort foods that they crave.  So how do you turn mac and cheese into a gourmet appetizer?  Start with an awesome gourmet recipe and turn it into bite sized portions.

    Make a lobster mac and cheese with upgraded cheeses (think fontina and guierere) and even some pancetta.  After you make the mac and cheese, throw them in greased mini muffin tins and top with a bit of breadcrumbs and bake till golden.  Pop them out and serve.  Viola, you have a fantastic mac and cheese that's now a great appetizer for your guests.


    Recipe for Lobster mac and cheese with pancetta - (with the option for this as an appetizer)
    recipe adapted from the gourmet foodie blog
     Ingredients:
    *2 seven ounce lobster tails or 1 lobster – pre-cooked and chilled in the refrigerator.
    12 ounces pancetta diced
    5 ounces unsalted butter
    1 tablespoon water
    1 tablespoon all-purpose flour
    1 1/4 cup heavy cream
    1 1/4 cup whole milk
    3 ounces Cheddar, shredded
    3 ounces Fontina, shredded
    3 ounces Gruyere, shredded
    12 ounces macaroni pasta

    * the original recipe called for a lobster that was uncooked and then to be cut up and put into the pan.  I cannot bring myself to kill a live lobster by cutting it open alive.  It takes all I have just to boil or steam it (but at least I find it to be a slightly more humane death).  I have adapted this recipe to pre-cook the lobster by steaming it.  You can steam lobster in a large pot by placing a small amount of water and heating the water until steam forms.  Once steaming, place your lobster in the pot with tongs (so you don't get burned) and wait.  The bigger the lobster the longer it takes to cook.  You can tell if your lobster is done by pulling on the antenna.  If it comes off clean and easily, it's done.  If you cannot pull it off, he's not ready yet.

    Directions:
    1. Cut the butter in to once ounce cubes. Place 4 ounces of butter in a small pot and melt slowly over low heat.
    2. In a small pan cook the pancetta until slightly crispy.
    3. Place a pot on high heat with heavily salted water for boiling the macaroni.
    4. Melt 1 ounce butter in medium sized pot over medium/high heat. Add the flour and cook for about 2 minutes stirring constantly until the mixture browns and develops a nutty smell.
    5. Stir in the heavy cream and bring to a boil. Add the milk and, again, bring to a boil. Reduce heat to a simmer and cook for 3 minutes.
    6. While this is simmering your water should have reached a roaring boil. Add macaroni to your pot of boiling salted water.
    7. When your cream sauce has simmered for 3 minutes slowly add the three cheeses, a handful at a time, and stir until fully incorporated.
    8. When the pasta is fully cooked pour the pasta into a colander to drain off water. Place the pasta in a bowl and add the cheese sauce. Mix well. Fold in the cooked lobster meat and pancetta; serve immediately.

    To turn into an appetizer
    Follow recipe above and pre-heat the oven to 300 degrees.
    1. Let your mac and cheese cool, or speed up the process by placing a bowl in the fridge while preparing  for the appetizer.
    2. Grease a mini-muffin pan in preparation for your mac & cheese.
    3. Pour some breadcrumbs into a bowl
    4. place an egg white, milk or melted butter in a dish
    4. Take a mini ice cream scoop or a spoon and scoop out a bit of your mac and cheese that has been cooling.  Drop this dollop into the bowl of breadcrumbs and lightly coat your "ball" of mac & cheese.
    5. Drop your "ball" into a mini muffin tin slot and lightly brush with either the egg white, milk or melted butter.  Repeat until you fill the muffin tin.
    6. Place your muffin tin in the oven and watch it, checking every 5 minutes until the top starts to turn a golden brown.
    7. Remove your muffin tin and pop out your mini mac and cheese appetizers with a spatula or spoon (that won't scratch the pan) and serve on a platter immediately.

    Turn tomato soup and grilled cheese into a gourmet display by simply serving the tomato soup in a shot glass or martini glass with a mini wedge of the sandwich on the side.

    Sick of the same old wedding or birthday cake?  Forgo the cake or have an additional milk & cookies bar.  Serve ice cold milk in old fashioned milk bottles set inside ice buckets.  Serve your cookies in jars and on plates that are different heights.  Personalize the look with stickers, ribbons and tags that match your theme.
